Born in the Highlands –or Los Altos- a beautiful countryside surrounded by blue color patches in the western state of Jalisco, Mexico. Nearly 7,000 feet above the sea level, the arid climate and iron rich volcanic soil makes a perfect environment for Blue Agave Tequilana Weber to grow. For centuries this has been our only raw material used to distillate the finest of the agave spirits. Made from single-estate agave that we harvest ourselves, not until the plant reaches its full 7 to 10-year period to mature without any irrigation system resulting in sweeter, fruitier flavored, mineral-rich agave hearts. Slowly cooked in an autoclave for 10-12 hours before they are put through a roller mill, and then naturally fermented in open air stainless steel tanks without yeast or additives for another 36 hours. After that it is double-distilled in copper stills. It takes a full week to create a single batch of this is handcrafted premium tequila. Our handcrafted blown glass bottles and beaten aluminum labels are truly art pieces that perfectly frame our fine spirit. Blanco (also known as Silver) is an unaged silvery clear tequila. Bottled directly after distillation where true aromas and flavors or the cooked agave shine brightly. For most experts Blanco is the best and purest tequila. Colour: Silvery clear. Food Pairing: This spirit goes well with sweet and salty dishes, lean meat cuts and refreshing fruity desserts. Ideally served neat in an Old Fashioned cocktail glass or on the rocks. Serving Temperature: 66°F/19°C
